Ingredients

  • ½ lb ground pork
  • ½ lb pork chorizo
  • ¼ cup carrot, grated
  • 2 tablespoons water
  • Salt and pepper, to taste
  • 1 tablespoon cornstarch
  • ½ cup kimchi, thinly sliced
  • 2 tablespoons vegetable oil
  • ¼ cup green onion, thinly sliced
  • 1 package of wonton wrappers or gyoza wrappers (usually 30 to 48 wrappers)

 

Directions

  • In a large frying pan over a medium flame add 1 tablespoon of vegetable oil and allow it to get hot.
  • Add in the ground pork and chorizo. With a spatula, break up the meat and cook for 15 minutes, mixing and combining the meat.
  • Then add in kimchi, green onion, and carrot. Cook for an additional 10 minutes.
  • Season with salt and pepper. Remove from flame and allow to reach room temperature.
  • Place the mixture in the fridge for an hour.
  • In a small bowl, mix cornstarch and water to make a wash. Set aside.
  • Fill each wrapper with 1 teaspoon of chilled pork mixture.
  • Dip your finger in the wash and moisten the edges of the wrapper with wash.
  • Lift one edge of the wrapper bring it to the other side of the wrapper and crimp the edges sealed with your fingers.
  • In a non-stick frying pan over a medium flame add in 1 tablespoon of vegetable oil and allow to heat.
  • Add in as many dumplings as you can (between 15 to 17) and cook for about 3 minutes or until one side is browned. Then pour in 1/3 cup water and cover the pan with a lid. Cook until water is absorbed.
  • Repeat the process until all dumplings are cooked.
  • Serve with soy sauce and chile.
