Chorizo & Egg Breakfast Ring

Perfect for serving your family and their loved ones, Dad will be impressed with these cooking skills. We recommend adding San Luis chorizo to take this dish’s flavors over the top!

Directions

  • Preheat oven to 375°. Unroll the crescent dough and separate it into triangles.
  • On an ungreased 12-inch. pizza pan, arrange triangles in a ring with points toward the outside and wide ends overlapping. Press overlapping dough to seal.
  • In a large skillet, cook Mexican chorizo over medium heat for 6-8 minutes or until cooked through, breaking into crumbles. 
  • Remove with a slotted spoon; drain on paper towels. Discard drippings, and wipe the skillet clean.
  • In a small bowl, whisk eggs, salt, and pepper until blended. 
  • In the same skillet, heat butter over medium heat.
  • Pour in egg mixture; cook and stir until eggs are thickened, and no liquid egg remains.
  • Spoon egg mixture, chorizo, and cheese across the wide end of the triangles. Fold the pointed end of triangles over the filling, tucking points under to form a ring (filling will be visible).
  • Bake for 15-20 minutes or until golden brown. Serve with salsa.

 

Slow Cooker Breakfast Casserole

Preparation Time – 25 mins | Cooking Time – 4 hours | Ingredients – 9 | Serves 8

Nothing says love like a casserole. Impress mom with this gorgeous topped meal! We highly recommend beef chorizo with these eggs for an extra savory texture.

Directions

  • In a large skillet, cook Mexican chorizo, onion, red pepper, and jalapenos over medium heat until cooked through and vegetables are tender, 7-8 minutes, breaking chorizo into crumbles; drain. Cool slightly.
  • In a greased 5-qt. Slow cooker; layer a third of the potatoes, chorizo mixture, and cheese. Repeat layers twice. 
  • Whisk eggs, milk, and pepper until blended; pour over top.
  • Cook, covered, on low until eggs are set, and a thermometer reads 160°, for 4 – 4 ½  hours. 
  • Uncover and let stand 10 minutes before serving. If desired, top with chopped avocado and tomato.

 

Summer Breakfast Skillet

A hearty meal for a hearty man, this breakfast skill makes the perfect dish with many kickin’ flavors. Try this recipe with our pork chorizo for even more savory goodness.

Directions

  • In a large skillet, cook chorizo, peppers, and onion over medium heat until chorizo is cooked through, 4-6 minutes, breaking chorizo into crumbles; drain.
  • Stir in tomatoes, zucchini, garlic, and paprika; cook, covered, until vegetables are tender, 5-7 minutes longer.
  • With the back of a spoon, make four wells in the vegetable mixture; break an egg into each well. 
  • Sprinkle eggs with salt and pepper. 
  • Cook, covered, until egg whites are completely set, and yolks begin to thicken, but not hard, 4-6 minutes.
  • Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted, 5 minutes.
